In a saucepan, melt the 1/4 cup margarine.
Stir in flour and salt. Add milk all at once.
Cook and stir until mixture is thickened and bubbly.

Pour mixture into a 1 1/2-quart casserole.

Brown the sausage and drain fat.
Beat eggs with milk, salts, pepper, mustard. Stir in bread, sausage and cheese and optional items.
Pour this mixture into a greased 9x13 inch baking dish.
Bake for 45-50 min at 350 degrees.

Add sausage, bread, cheese and put in large casserole dish.
Let set in refrigerator all night.
Before baking the next morning, add the 1 cup milk and cream of mushroom soup.

Ann'S Egg-Sausage Casserole

Cut smokies in small pieces.
Fry bulk sausage breaking into small pieces, and drain.
Beat eggs, and add remaining ingredients.
Mix all together and put in a 9x13 casserole dish.
Cover with foil and refrigerate overnight.
Bake covered for 55 minutes.
Remove cover and bake 5-10 minutes more.
Let set 5-10 minutes after removing, so eggs can set.

Brown sausage; drain.
In blender, blend eggs, salt, mustard and milk until fluffy.
In a 9 x 13-inch pan, layer 1/2 bread crumbs, 1/2 sausage, 1/2 cheese and 1/2 egg mixture, then layer remaining ingredients.
Refrigerate overnight.
Bake at 350\u00b0 for 45 minutes the next morning.
