Place hash browns, 1/4 cup margarine, onion, pepper, cheese, sour cream and soup in large greased baking dish.
Mix until well blended.
Combine remaining 2 tablespoons margarine with cereal or cracker crumbs and sprinkle over top.
Cover and bake at 350\u00b0 for 40 to 50 minutes or until bubbly.

Hash Brown Potato Casserole

Mix thawed hash browns, soup, butter or margarine, onions, salt and pepper and 1/2 of Cheddar cheese.
Fold in sour cream. Put in 9 x 13-inch buttered baking dish.
Sprinkle rest of Cheddar cheese on top.
Bake at 350\u00b0 for 1 hour.

In a medium skillet, over medium-high heat, combine turkey and onion. Cook 5 minutes or until turkey is no longer pink.
Add potato, breaking up larger pieces of potatoes with spoon, if necessary. Cook 2 to 3 minutes. Add salt and pepper.
Into 1-quart ovenproof casserole, lightly coated with vegetable cooking spray, bake turkey
mixture in a 375\u00b0 oven for 10 to 15 minutes.
Top casserole with cheese and continue baking until cheese melts. Serves 4.
