Turkey Hash - cooking recipe

Ingredients
    1 Tbsp. canola oil, divided
    1 large onion, chopped fine
    2 c. cubed, cooked potatoes
    2 to 2 1/2 c. cubed cooked turkey
    1/4 c. finely minced fresh parsley
    2/3 c. chicken or turkey broth or leftover gravy
    1 1/2 Tbsp. dry unseasoned bread crumbs
Preparation
    In nonstick skillet heat 2 teaspoons of the oil.
    Add onion. Saute over medium-low heat until onion begins to brown.
    Stir in potatoes, turkey and parsley.
    Season to taste.
    Add broth or gravy.
    Brush 9 to 10-inch round baking dish or cast-iron skillet with remaining oil and spoon in turkey mixture.
    Sprinkle with bread crumbs.
    Bake 30 to 40 minutes until top is nicely browned in 350\u00b0
    oven.
    Serve with ketchup.
