Cut meat into 4 pieces.
Trim fat.
Omit flouring and pounding meat.
Brown meat in hot oil.
In 3 1/2 to 4-quart crock-pot, place onion, celery and carrot. Sprinkle with thyme, tapioca, salt and pepper.
Pour undrained tomatoes over vegetables.
Add meat. Cover, cook on low heat for 10 to 12 hours.
Serve with hot rice or noodles.

Easy Swiss Steak

Cut meat in pieces approximately 4 x 4-inches or less.
Place in a heavy pot with cover.
Cover with water and cook at a slow boil until color is gone from meat (several hours).
Add onion, celery, green peppers, mushrooms and carrots and continue cooking until meat is tender, then add tomatoes and approximately 2 tablespoons flour or cornstarch, dissolved in hot water or juice of meat.
Let simmer for a few minutes or until liquid thickens.

Season your cubed steak and flour it.
Fry until done.
Take meat out and put on paper towel to absorb grease.
Put steak in casserole dish, cut up onion and green pepper and arrange on top of steak.
Cut tomatoes up and add tomatoes and juice on top of all ingredients.
Cover and bake for about 2 hours at 250\u00b0 to 300\u00b0.
Serve over mashed potatoes or rice.
