Place the eggs in a pouring bowl beat using a whisk or electric blender, then add parsley & mint.
Spray olive oil on the non stick pan.
Place pan on the stove top, heat on a medium to low heat.
Pour 1/4 mixture of eggs on pan. (the eggs should cover the entire pan).
Add 1/4 of onion, bacon and cheese on half a side of the eggs.
Cook until the egg is slightly brown.
Flip half of the cooked eggs and press down lightly (be careful as some of the mixture oozes out).

Spray Pam in a 9 x 13-inch baking pan. Layer bread cubes, sausage, mushrooms and cheese. Mix the eggs, 2 cups milk, salt, pepper and mustard and pour over the layered ingredients. Cover and refrigerate overnight. Just before baking, mix the soup with the remaining milk and pour over the top. Bake at 350\u00b0 for 1 hour. Let it stand for 15 minutes before cutting into squares for serving. Serves 12.

In a microsafe bowl, melt the butter on Medium-high power for 10 seconds.
Add the onion.
Microwave on High power for 2 to 3 minutes, until soft.
Add ham and chopped chilies.
Slice the crust off the bread, if desired.
Cut slices into triangles. Place half of them in individual microsafe serving dishes.
Top with ham-onion mixture.
Sprinkle with most of the cheese.
Top with remaining bread.

Heat bacon at medium heat in heavy saucepan. Add garlic and onion and cook under low heat until it browns. Add spinach and cook until it wilts. Combine eggs in a large bowl; stir well. Add wine, salt, pepper and 2 tablespoons cheese. Add spinach and bacon mixture. Heat oil in a medium nonstick skillet over low heat. Add egg mixture and cook 15 minutes or until set (DO NOT STIR). Sprinkle top with remaining Parmesan cheese. Broil for 3 minutes until top is set.
