Cook mixed vegetables according to package directions. Drain. Combine cooked vegetables, cheese, water chestnuts, onions and mayonnaise, stirring gently. Spoon mixture into a 1 1/2 quart casserole dish coated with cooking spray. Bake at 350 degrees for 20 minutes.

Preheat oven to 350\u00b0.
Sift all dry ingredients together (cake flour, baking powder, cinnamon, nutmeg and salt).
In a large mixing bowl, combine the vegetable cooking oil and sugar.
Beat the mixture until it becomes smooth.
Add egg yolks and beat well. Add the hot water.
Stir well.
Add all the dry ingredients. Stir in the vanilla, then the sweet potatoes and nuts.

Mix together flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice.
In a separate bowl, beat egg whites or egg substitute with sugar, oil and vanilla.
Stir in zucchini and raisins.
By hand, stir in flour mixture just until flour is blended.
Spray 2 (4 x 8-inch) loaf pans with vegetable cooking spray and dust with 2 teaspoons flour.
Divide batter into pans.
Bake at 350\u00b0 for 50 to 60 minutes.
Makes 2 loaves or 32 (1-slice) servings.

Herbed Chicken

Remove skin from chicken. Spray 12 x 8-inch baking dish with vegetable cooking spray.
Arrange chicken, breast side up, in dish.
Sprinkle with thyme and pepper. Combine soup and water. Spoon over chicken. Cover with foil. Bake at 350\u00b0 for 50 minutes or until chicken is fork-tender.
Remove foil halfway through cooking.
Stir sauce before serving.
