Cheesy Vegetable Omelet - cooking recipe

Ingredients
    vegetable cooking spray
    1/4 c. chopped green pepper
    1/4 c. chopped onion
    1 Tbsp. chopped pimiento
    2 eggs
    2 egg whites
    2 Tbsp. water
    1/8 tsp. pepper
    2 3/4 oz. slices low-fat process sharp Cheddar cheese
Preparation
    Coat a 6-inch skillet with vegetable cooking spray; place over medium heat until hot.
    Add green pepper, onion and pimiento. Saute until tender.
    Remove from skillet and set aside.
