Zucchini Nut Bread - cooking recipe

Ingredients
    2 c. grated or chopped, unpeeled zucchini
    1 tsp. salt
    1 tsp. baking soda
    4 eggs
    1 tsp. grated lemon rind (if desired)
    vegetable cooking spray
    3 c. flour
    1 tsp. flour
    3/4 tsp. baking powder
    1 Tbsp. cinnamon
    1 c. vegetable oil
    1 c. raisins (if desired)
    1 c. nuts, chopped
Preparation
    Mix all ingredients.
    Place in loaf pans coated with vegetable cooking spray.
    Bake at 325\u00b0 for 55 to 60 minutes.
    Makes 2 to 3 loaves, depending on size of pan.
