Copycat Trader Vic'S Mai Tai

Pour all ingredients over shaved ice in a cocktail shaker.
Shake vigorously and pour into a collins glass.
Add a sprig of fresh mint.

Trader Vic'S Grog

Place in shaker.
Shake and pour into an old fashioned glass.
Decorate with a cherry. Serve with straw.
Note: Trader Vics served this in a ten pin pilsener glass.

Trader Vic'S Scorpion

Mix thoroughly and pour over cracked ice. Let stand 2 hours, add more ice and pour into champagne glasses.

Chinese Chicken Salad

Slice chicken into 1-inch chunks.
Pour dressing over chicken just to cover and allow to marinate for a few minutes.
Heat skillet and place chicken and all of marinade mixture into skillet. Saute over low heat for 2 to 3 minutes; cut into a chicken piece with a sharp knife.
If it is white inside, remove from heat immediately.
Refrigerate until serving.

Trader Vic'S Pineapple Chicken

Combine chicken 1/2 cup chicken stock, 1/2 cup cornstarch, flour, salt, and eggs; beat well.
Pour approximately 1-inch oil into wok.
Heat until almost smoking.
Dip pineapple and chicken into batter; cooking a few in heated oil at a time.
Drain pineapple and chicken pieces.
Pour off all but a thin coat of oil from wok.
Put garlic, pepper, and carrot into wok, and cook for 2 - 4 minutes.
Pour in vinegar, sugar, and soy sauce.
Bring to a boil.
Quickly stir in cornstarch and chicken stock mixture.

Tonga Punch Trader Vic

Mix the ingredients in a gallon jug.
Pour in a punch bowl over chipped ice and stir thoroughly about 20 minutes before serving.
Add more large pieces of ice.
Float 5 or 6 Gardenias.
Serve in bamboo or coconut cups.

Champagne Apricot

If you want to get a party started and you want a surprise, make this Champagne Apricot.
\"This is really bordering on a love potion,\" so says Trader Vic.

Chocolate Chip Pecan Pie* * * * *

Oysters Parmesan is my favorite entree from Trader Vic's and this is as close as I have come to duplicating it.
They also serve them with caper butter.

Trader Vic'S Salad

Mix all together and toss with dressing.

Pumpkin Cheesecake Pudding - Sugar Free

Measure milk (package calls for 2 cups but only use 1 cup). Add protein powder to the milk. Mix throughly.
Add pudding mix and pumpkin pie spice into another bowl and mix the dry ingredients with a spoon or fork.
Pour milk/protein mixture and pudding mixture till mixed throughly.
Place in refrigerator and chill. Top each serving with 1 tablespoon Cool Whip.

St. Patrick'S Trader Vic Salad

Mix all but lettuce and croutons.
Toss with greens and top with croutons.

Trader Vic'S Crab Rangoon

Clean cauliflower and let dry.
Heat oil. Drop into hot oil just a few minutes. Drain.
Add salt or seasonings to taste. Fast, easy and good.

Trader Vic Type Chicken(My Husband Brought This Recipe Home From Friends In Toronto.)

Blend marinade ingredients and pour over chicken, coating each piece.
It will smell lovely.
Refrigerate several hours or overnight.
Bake, uncovered, at 375\u00b0 for 1 1/4 hours, basting occasionally.

Trader Vic'S Crab Rangoon

Combine crabmeat with cream cheese, steak sauce and garlic powder in medium bowl and blend to a paste.
Place heaping teaspoon on each won ton. Gather four corners of won ton together at top. Moisten edges with egg yolk and pinch or twist together gently to seal.
Heat oil in wok, deep fryer or electric skillet to 375 degrees.
Add won tons in batches and fry until golden brown, about 3 minutes. Remove with slotted spoon and drain on paper towels.
Serve hot with Chinese mustard and/or red sauce for dipping.

Trader Vic'S Curried Lamb Kebabs

For the marinade, take a 1 1/2 quart glass or stainless steel bowl, whisk olive oil, mustard, onion, vinegar, Worcestershire, curry powder, garlic and sesame oil.
Mix in margoram, salt and pepper. Trim lamb and cut into 1 1/2 inch pieces, and place in the marinade mixture, turning to coat. Cover and chill for 3-4 hours.
For the kebabs, clean mushrooms and discard stems. Seed bell peppers and cut into strips. Peel onion and cut into eighths.
Remove lamb from marinade and reserve the marinade.

Trader Vic Mai Tai Cocktail

Fill a rocks glass with 1 cup crushed ice. Set aside in the freezer.
Combine rum, orgeat, orange Curacao, rock candy syrup, and lime juice in a cocktail shaker. Add 1 cup ice, cover and shake until chilled. Strain into the chilled rocks glass.
Garnish with half of the lime shell inside the drink and float a sprig of fresh mint on the edge of the glass.

Cancun Martini

Pour tequila and coffee-flavored liqueur into a shaker filled with ice; cover and shake until chilled. Strain drink into a martini glass. Garnish with a maraschino cherry.

Trader Vic’S Fish House Punch.

Dissolve the sugar in a little water.
Add the remaining ingredients to a large punch bowl.
Add a 10 pound cake of ice. I told you a LARGE punch bowl right?.
Let stand 2 hours before serving.
Stir occasionally.
Keep the brother in law away from it before serving and don't send him to stir it.
Serves 20 to 25.
And stay away from Fireworks afterward.

Trader Vic'S Chinese Spare Ribs

In bowl, whisk together soy sauce, plum sauce, tomato paste, hoisin sauce, dry sherry, ginger, garlic, sesame oil, and salt. Set aside.
Preheat oven to 350 degrees Fahrenheit.
Rub sugar on all sides of ribs.
Place on greased or sprayed rack, in foil lined roasting pan, meat side up.
Bake, tightly covered, 1-1/4 hours.
Drain juices from pan; remove rack and return ribs to pan.
Spread sauce over ribs, turning to coat.
Bake, uncovered, 40 minutes or until ribs are tender and glazed, turning and basting twice.

Grilled Drunken Pina Colada Shrimp

Peel the shrimp (the really big ones don't have the vein!).
Mix the pina with the rum.
Pour over shrimp, reserving a small amount for the grilling process.
Marinate for no longer than 30 minutes or the acids will turn it into ceveche.
Grill for approximately 2 minutes each side, brushing each side with mix.
Serve with the above mentioned aioli or your favorite tropical/sweet sauce.
