Easy Mexican Chicken Casserole

Preheat oven to 450 degrees.
Place chicken tenders in the bottom of a standard casserole dish.
Sprinkle taco seasoning over tenders. Layer ingredients in order from black beans to doritos.
Bake in oven for 30-40 minutes. Enjoy!

Mexican Chicken Casserole

Mix together soups, broth and Ro-Tel (cook chicken and retain broth for use in this recipe); heat thoroughly.
Layer in order: crushed Doritos, soup mixture, chicken, onion and cheese.
Make 2 layers.
Top layer should be Doritos and cheese.
Bake for 30 minutes at 400\u00b0 until cheese melts.

Mexican Chicken Casserole(King Ranch Chicken)

Whisk together soups, milk, chiles and salsa (you may use 1/2 cup of either salsa or chiles instead of 1/4 cup of each).
Stir in the cooked, cut up chicken.
Spray baking dish with nonstick coating or grease it, then layer 3 or 4 torn tortillas, soup and chicken mixture and grated cheese.
Continue layering until dish is full.
(For a 3-quart Corning dish it should take about 3 ladles of soup and chicken mixture per layer.)
This recipe makes about two casseroles in 3-quart dishes.
One can be frozen for later use.

Saute onion in oil until tender.
Add Ro-Tel, soup, and broth. Simmer about 10 minutes.
Remove from heat.
In a large casserole dish, layer chips, chicken, sauce and cheese.
Top with a few crushed chips.
Bake at 350\u00b0 for about 30 minutes until cheese is melted and casserole is heated through.
Can be heated in microwave for 15 to 20 minutes.
I use Tostitos chips and Velveeta cheese. Use mild Mexican Velveeta to make it extra spicy.

Place rice in bottom of lightly greased 3 litre casserole dish, I sprayed the dish with veggie spray.
Combine tomatoes, garlic, onion,jalapeno pepper, chili powder and water in medium bowl; stir well. Pour half the tomato mixture over the rice; arrange chicken pieces on top of tomato layer and top with remaining tomato mixture; top with cilantro.
Bake, covered, in 325f degree oven for 1 1/2 hours until chicken and rice is cooked and all liquid is absorbed. Garnish with more cilantro if you wish.

Boil chicken breasts for 1 hour.
Let cool and remove chicken from bone in small strips.
Mix together in a large bowl Ro-Tel tomatoes, cream of chicken soup and cream of mushroom soup.
Add boiled chicken strips to mixture.
Crush a layer of Tostitos chips on the bottom of a 9 x 13-inch casserole dish.
Pour mixture over chips.
Bake at 350\u00b0 for approximately 30 minutes.
Remove and top with grated cheese.
Return to the oven and bake until cheese is nice and melted.
Serves 6 to 8 people.

Mexican Chicken Casserole

Saute onion in oil in skillet until tender.
Add soups, green chilies, pimentos, chicken and Velveeta cheese.
Mix well. Cut tortillas into 1-inch squares.
Alternate layers of tortilla squares and soup mixture in a 9 x 12-inch casserole until all ingredients are used. Top with Monterey Jack cheese.
Bake at 375\u00b0 for 45 minutes to 1 hour or until heated and cheese is melted. Yields 12 servings.

Boil and debone chicken.
Mix together all ingredients, only use half of the Doritos in the mixture and sprinkle the rest on top of the casserole.
Bake at 350\u00b0 for 1 hour.

Sprinkle chicken with salt and pepper; place in crock-pot first thing in the morning.
Add celery, Tabasco sauce and corn. Cook on low for 6 to 7 hours.
When chicken is done, transfer to Dutch oven.
Add lima beans and tomatoes.

Fry bacon until crisp; crumble and sprinkle over casserole just before serving.

Cook chicken until tender.
Take chicken off the bones and put in a casserole dish.
Crush tortilla chips and put over chicken. Mix Ro-Tel tomatoes and mushroom soup and pour over chips.
Melt Velveeta and pour over mixture.
Cook 15 or 20 minutes until cheese is bubbly at 350\u00b0.

Boil chicken breasts, then dice.
In a saucepan, mix Ro-Tel, soup and the Velveeta until cheese is melted.
Then add beans, chili powder and chicken.
In a casserole dish, cover the bottom with a layer of the sauce, then a layer of chips (or shells). Continue and end with sauce.
Top with shredded Cheddar cheese and bake for 45 minutes at 350\u00b0.

Boil the chicken until done. Pull apart. Keep the broth.
Mix soups, salsa, and chilies together. Set aside.
In 13x9 pan, layer half of the doritos, half of the chicken, half of the sauce, and then half of the cheese. Pour about 1/4 cup of the broth on top.
Repeat ending with cheese and broth.
Add on sliced jalapenos or black olive slices for presentation, if you wish.
Bake at 350 for 30 minutes.

Melita'S Mexican Chicken Casserole

Mix soups and milk thoroughly and set aside. Reserving about 1 cup chips to sprinkle over the top, alternate the following evenly till all used: chips layer, chicken layer, pepper, onion, cheese slices, chips, chicken, pepper, onion, cheese, etc...After last ingredient is used pour soup mixture over the casserole ingredients. Sprinkle with remaining chips. Bake in 350\u00b0 oven until bubbly and chips brown; about 25 to 30 minutes.

Preheat oven to 350\u00b0.
Boil chicken and strip off bone.
Saute onion in 2 tablespoons butter and mix with chicken.
Take 3/4 cup of chicken broth, put in a bowl and add cream of mushroom, cream of chicken soup and Ro-Tel and blend them together.
Take 9 x 13-inch casserole dish.
Put chicken in dish.
Sprinkle layer of chips, layer of cheese mixed together, layer of chips, then pour soup and Ro-Tel mixture on top and layer with rest of cheeses. Bake 30 minutes.

Cook chicken in water to which you have added salt, pepper and bay leaf.
Remove chicken from stock, bone and cut up.
Save 1/2 cup stock.
Combine soups, tomatoes and chicken stock; mix well. In a casserole dish, make three layers in the following order: torn tortillas, chicken, tomato mixture, chopped onion and grated cheese.
Bake at 350\u00b0 for 45 minutes.
