Saute beef and onion in a skillet pan until cooked. Drain grease.
Mix in 1/3 cup Las Palmas enchilada sauce.
In a skillet, heat 1 can (10 ounce) sauce. Dip each tortilla in sauce until well coated.
Lay tortilla in a 9 x 13-inch baking dish. Fill with 3 tablespoons of meat and roll.
Place seam side down, side by side, in same dish.
Cover rolled enchiladas with remaining sauce. Bake at 350\u00b0 for 20 minutes. Makes 8 tortillas, 4 servings.
Fry together meat, onion, cumin, oregano, salt and pepper; drain grease.
Grate cheese.
Brown flour in oil and add 1/2 teaspoon of cumin and oregano.
Add to meat mixture.
Fry tortillas; dip in Las Palmas sauce.
Fill with meat filling; add 1 olive and some cheese.
Roll up and put in a 9 x 13-inch pan. Pour Las Palmas over top.
Add any leftover olives and sprinkle with rest of cheese.
Bake at 350\u00b0 until hot and cheese is melted.
In small bowl, combine turkey, 2 cups of cheese, green chiles and onion.
In small skillet, bring enchilada sauce to a boil; remove from heat.
Dip each tortilla into heated sauce to soften. Spoon 1/3 cup of turkey mixture and 2 tablespoons of sour cream down center of each tortilla.
Roll.
Place tortillas seam side down in a 12 x 8-inch baking dish.
Pour remaining heated enchilada sauce over top.
Sprinkle with remaining 1 cup of cheese.
Bake 20 minutes at 350\u00b0.
Makes 4 servings.

Red Chile Sauce---------.
Stem and seed chiles,
Stew, then skin and chunk chicken. Mix with remaining ingredients, except enchilada sauce. Spray pan with Pam. Warm tortillas in microwave to make them more flexible, then fill each with desired amount of chicken mixture and roll. Put 1/2 cup enchilada sauce in bottom of 13 x 9 casserole and place rolled tortillas in dish. Cover with remaining sauce; cover with foil and bake for 30 minutes in 350\u00b0 oven. Remove foil and top with more cheese. Bake another 10 minutes. Top with black olives and serve with salsa, sour cream and/or guacamole.

Dip tortillas in sauce and place in a round casserole dish; spoon meat on tortillas and chopped olives and cheese.

Brown ground beef and salt in skillet.
Pour off excess grease.
Add enchilada sauce and soup to beef.
Layer tortilla strips and beef mixture in greased 10 x 10-inch baking dish.
Top with grated cheese.

Mix ground beef, onion and garlic in 2-quart casserole. Microwave at High 5 to 9 minutes.
Break up beef and drain.
Stir in sauce, water, chili powder, salt and pepper.
Microwave on High 6 minutes, stirring after 1/2 time.
Alternately layer tortillas, meat sauce and cheese in 1 1/2-quart round casserole, ending with cheese.
Microwave at High 1 to 3 minutes until cheese is melted. Let stand 2 to 3 minutes.

Boil chicken without skin until tender.
Let chicken cool, shred the chicken and put aside.
Lightly fry tortillas in oil. Dip the tortillas in the enchilada sauce; roll with chicken and place in a greased pan.
Pour the remaining sauce over the tortilla rolls.
Garnish with cheese, green onion and olives. Bake at 350\u00b0 for 20 minutes.

In a Dutch oven, put a layer of tortillas on the bottom (don't skimp on the tortilla layers; each layer needs to cover the

Mix the spaghetti sauce mix according to directions and add 1 cup to meat mixture, saving remainder in freezer until next time!
Add remainder of ingredients, mixing well, and simmer, covered, for several hours, stirring frequently.
If sauce gets too thick, add a little hot water or more tomato sauce. When using as spaghetti sauce, serve with Parmesan cheese.

Dip tortillas in hot sauce and place a layer in 2-quart casserole. Add some meat, cheese and olives; then another layer of dipped tortillas, then meat, cheese and olives.

Bake for 45 minutes at 350\u00b0.

Dip tortillas in sauce and fill with meat and onions mixture. Place two olives and cheese.

Continue until pan is full.
Put remaining sauce over all the tortilla and spread with rest of the cheese.
Bake at 350\u00b0 for 1/2 hour or more.
Serves 10 to 12.

Stirring constantly, slowly add enough of the water to make a thin paste.
Pour into pan and add rest of water.
Cook over medium heat, stirring constantly, until mixture thickens.
Stir in tomato sauce.
Use in your favorite enchilada recipe.

Pour tomato sauce into a small saucepan over medium heat. Add spices and stir. In a cup, combine warm water with flour until it forms a paste, then gradually add to tomato mixture while stirring. Let simmer for 10 minutes, to thicken. Cool the sauce then spoon over enchiladas or layered tortillas and cheese, then prepare according to enchilada recipe directions (usually, heat in 425 degree oven for about 15 minutes). Muy bueno!
