Preheat oven (or toaster oven) to 400 degrees; toast muffin directly on oven rack. Transfer to a rimmed baking sheet (or toaster-oven tray) and spread with the 1/2 tablespoon butter.
Layer bottom half with the 2 slices Canadian bacon, the cheese and the tomato, sprinkle with salt and pepper.
Return to oven; bake until cheese has melted, about 5 minutes; top with other half of muffin half, Enjoy.

Preheat oven to 400 degrees. Lightly spray 12 cup muffin tin.
In a large bowl combine flours, wheat germ, brown sugar, baking powder, salt, cinnamon and nutmeg, stirring well.
In a small bowl mash banana and add remaining ingredients except blueberries. Whisk until well blended. Make a well in the center of the flour mixture.
Pour the banana mixture into the well and stir just till moist. Mixture will be lumpy.
Gently fold in blueberries.
Pour batter into muffin tins and bake for 15 minutes or until toothpick comes out clean.

Healthy, Delicious Breakfast For One!

Toast english muffin, and place muffin halves face-up in a bowl. Spoon cold yogurt on top of muffin halves.
Meanwhile, chop apple, and put chopped apple and dates in a microwave-safe container. Cover with water, sprinkle with salt, and microwave on high for 1 minute. Stir, and microwave for 1 more minute. Remove from heat.
Pour microwaved contents over yogurt and muffins. Let sit for 1-2 minutes, and dig in with a fork or spoon!
Optional--can use flavored yogurts, and/or top with fresh berries or honey, etc.

Microwave the egg whites in a ramekin on high heat, covered, for approximately 1 minute - or slightly less or more depending on how you like your eggs.

Stir the dry ingredients together. In another bowl, mix wet ingredients together (make sure to soak the raisins for 5 minutes, then discard the water) and pour them into the dry mix bowl. Stir until just combined, then pour into 6 greased muffin molds and bake at 350F for 20 minutes. Once out of the oven, leave the muffins in the molds for 5 minutes before transferring them to a cooling rack.
