hocolate chips, 7 oz. jar marshmallow cream, 1/2 lb. melted
Boil yams until soft.
Skin yams when they cool down; slice yams and line them in a baking dish.
Sprinkle brown sugar, white sugar and marshmallows along the top.
Cut up about 1/2 stick of butter (depending on how many yams you have) and place on top of yams.
Broil until brown.
Turn yams into greased 1-quart casserole. Top with sliced turkey. Sprinkle with salt and pepper.
Blend marshmallow cream and lemon juice. Pour over turkey. Cover and bake in moderate oven at 375\u00b0 for 25 minutes. Makes 4 servings.
Drain pineapple slices, reserving 1/2 c liquid.
Line sides of baking dish with pineapple and put yams in the center.
Combine flour, brown sugar, cinnamon and salt; cut in butter until mixture resembles coarse crumbs. Stir in nuts.
Pour reserved pineapple liquid over yams. Sprinkle with flour mixture. Bake at 350\u00b0F for 25 minutes. Top with marshmallows and then broil until lightly brown.
Line square 8 x 8 x 2-inch pan with pineapple.
Place drained yams on the top, along with 1/4 cup of the pineapple juice.
Mix together flour, brown sugar, cinnamon, butter and salt until coarse crumbs and sprinkle over top of yams.
Bake at 350\u00b0 for 20 minutes.
Remove from oven and sprinkle marshmallows over yams. Broil until brown.
Serve.
Preheat oven to 400.
spray 9x9 pan with cooking spray.
drain yams and place in pan.
sprinkle brown sugar over yams.
sprinkle with cinnamon.
place cut up butter ontop.
cover with marshmallows.
cover with aluminum foil or glass lid sprayed with cooking spray on bottom to prevent marshmallows from sticking.
bake 20 min.
remove cover and baked uncovered until marshmallows are light brown about 5-10 mins.
Drain yams and pineapple (save the pineapple juice).
In a pot, add pineapple juice, sugar, and '10' marshmallows.
Put yams in a 9x13-inch casserole dish and pour mixture over top.
Top with pineapple chunks.
Put into a 300\u00b0F oven for 40 minutes.
Top with remaining marshmallows (or amount you prefer).
Put casserole back into oven for 10 minutes to soften and slightly melt marshmallows.
Watch closely because marshmallows puff up quickly and may burn.
Blend yams with sugar, salt, spice, butter and cream.
Mix half the marshmallows with yams.
Turn into greased baking dish. Top with remaining marshmallows.
Bake in a moderate oven (350\u00b0) for 20 minutes, until mixture is puffy and marshmallows delicately browned.
Makes 6 servings.
Spray a shallow baking dish with nonstick coating. Cut larger pieces of yam in half.
Place in the dish in a single layer. In a saucepan, melt margarine, cinnamon and brown sugar. Add 1/3 package marshmallows and mix well to melt.
Pour marshmallow mixture over yams.
Sprinkle more marshmallows on top. Bake for 45 minutes at 325\u00b0, basting often.
Drain yams and mash.
Drain pineapple, reserving juice.
Add juice to yams with sugar and butter.
Beat well.
Stir in pineapple and pecans.
Coat inside of 9-inch pie plate with no-stick cooking spray.
Spoon in yam mixture.
Bake in 375\u00b0 oven for 20 minutes.
Sprinkle with marshmallows.
Bake 10 minutes longer.
Put mashed yams in casserole. Mix together margarine, cinnamon, ginger, nutmeg, brown sugar and honey.
Mix in yams with pineapple bits and pecans.
Top with miniature marshmallows.
Bake at 325 degrees until heated through and marshmallows are bubbly.
Note: You may want to cut back on the ginger, I only used 1 teaspoon.

Carefully remove the foil
Peel sweet potatoes or yams.
Split in half lengthwise.
Make syrup of water, sugar, margarine and nutmeg.
Place sweet potatoes or yams in syrup.
Lower stove to medium and cook until soft.
Can be made ahead and reheated.
Delicious with ham.
Recipe can be doubled or halved.
Heat yams, in their liquid, till hot.
Keep hot on low heat while you mix up Praline sauce.
Mix together the brown sugar, heavy cream, butter/oleo, pecans, salt, cinnamon, and nutmeg in a saucepan.
Stir over medium heat till mixture comes to a gentle boil.
Keep hot on low burner while you drain liquid off yams.
Place yams in serving bowl.
Pour hot Praline sauce over yams.
Serve and enjoy!
MAKE THE YAMS:.
Preheat the oven to
Wash the yams/sweet potatoes and pat dry with a paper towel.
Lightly oil the skins of the yams/sweet potatoes with the olive oil.
Bake at 400 degrees for approximately an hour, or til tender.
Carefully peel the skins off of the sweet potatoes and serve with butter.
Put all ingredients in large pot and bring to slow boil.
Peel yams and slice lengthwise.
Be sure each slice is coated when put into pot with above ingredients so it won't turn dark.
Cook without lid until tender.
(Recipe can be doubled, tripled, etc.)
Slice yams into 1/2-inch thick pieces. Combine with pineapple, butter, sugar and cinnamon in a 2-quart casserole. Microwave on High 4 minutes; stir. Sprinkle top with nuts and brown sugar. Microwave on High 4 to 5 minutes. If dish is not hot and topping not melted after 2 minutes, rotate dish 1/4 turn. Continue to microwave. Makes 6 to 8 servings.

Wash the yams, pare, and cut them into bite-sized chunks.
Heat a wok or a large, deep pan; add 4 cups of the oil and heat to 250*F.
Deep fry the yam chunks until tender, 1-2 minutes.
Heat another wok or pan and add the 1 Tbsp.
oil and the sugar; cook over low heat until the sugar is melted and caramelized.
Add the fried yams; mix well.
Sprinkle with sesame seeds before removing to a plate.
When serving, dip the caramelized yams in a bowl of cold water, one by one, while hot.
