Preheat oven to 350 degrees F.
Cover the bottom of a pyrex casserole dish with olive oil and chopped onion. Salt and pepper the fish on both sides to taste.
Season skinless side of fish with sprinkling of garlic powder. Pile stuffing \"Recipe #511850\" over fish evenly, pressing stuffing mixture carefully to adhere.
Place casserole into hot oven and bake for 15 minutes, being careful not to over-bake so it won't be dry. Pronto, it is ready to serve.
Melt the butter in 9 x 13-inch pan.
Crumble the crackers in the butter.

Repeat layers and sprinkle on seafood seasoning.

A very quick and easy dish, pretty enough for company.
Crumble crackers in a bowl.
Cook onions in margarine on medium-low heat. (Don't burn margarine.)
Cook until soft, 5 to 7 minutes.
Pour into crumbled crackers.
Add Parmesan cheese.
Preheat oven to 400\u00b0.
Rinse haddock fillet; pat dry.
Make a slice down fillet for stuffing.
Microwave spinach to defrost. Squeeze out excess water.
Brown garlic and butter in saucepan. Add spinach and cream cheese; mix well.
