Baked Stuffed Scallops - cooking recipe

Ingredients
    2 stacks Town House crackers, ground
    1 stick margarine, melted
    1 medium onion, chopped
    1 c. grated Monterey Jack cheese
    salt and pepper
    garlic or onion powder
    2 to 3 Tbsp. Parmesan cheese
    1 to 2 lb. scallops or 4 to 5 rectangles of haddock
Preparation
    Saute onion in margarine.
    Combine cracker crumbs, cheese, salt, pepper, garlic powder and Parmesan cheese.
    Place fish in a greased casserole.
    Top with stuffing mix.
    Cover and bake at 350\u00b0 for 30 minutes.
    Remove cover for last 15 minutes.
    If using haddock, bake for 1 hour.
