Blend Ranch dressing mix and mayo in separate bowl and then add to crumbled cornbread. Toss in remaining ingredients.
Refrigerate for at least 3 hours and serve cool.

Mexican Cornbread

Brown hamburger meat in a skillet until done and drain fat. Season with salt, pepper and chili powder.
Can use part of a package of taco seasoning.
Optional:
Add some chopped onion and bell pepper.
Add chunked pieces of Velveeta cheese to top of meat.
Pour cornbread mixture (all the ingredients except meat) on top of the meat and cheese.
Bake at 400\u00b0 for about 45 minutes. Remove from oven and top with grated cheese.

Mexican Pie

Cook ground beef and drain fat.
Return meat to skillet; add onion, green pepper, sauce and seasonings and simmer.
Cook corn or mixed vegetables according to instructions, until tender.
Mix with meat sauce and season to taste if further is needed.
Prepare Jiffy mix as instructed on the box.
Place meat sauce and vegetables that have been mixed into a casserole dish and pour Jiffy mix on top. Cook at 350\u00b0 until golden brown.
If oven cooks fast, reduce heat to ensure Jiffy mix is completely cooked.

Combine cornbread mixes together according to directions on box. Additionally, add 1/3 cup milk and can of corn to the cornbread mixes.
Using a nonstick spray, prepare a 9 x 13-inch baking pan. Pour a small amount of cornbread batter in pan to form a layer. Sprinkle meat mixture on top and then sprinkle grated cheese on top of the meat.
Pour remaining cornbread mix on top of all and bake according to box directions.

Brown meat until crumbly.
Drain fat.
Add taco mix, onion and tomatoes.
Cook over low heat a few minutes.
Combine eggs, milk and 1 cup of the corn.
Add cornbread mix and blend well.
Pour 1/2 of the batter in a 15 x 9 x 1 1/2-inch casserole.
Top with beef mixture, cheese slices and remaining corn.
Cover with remaining cornbread mixture.
Bake at 425\u00b0 for 25 to 30 minutes.
