CRANBERRY MUFFINS.
Preheat oven to 400

In a bowl, mix flour, baking powder, salt and 2 Tbs sugar.
Stir in egg, milk and oil all at once. Stir just until moistened.
Fold in cranberry orange relish.
Spoon misture into greased tea-sized muffin tins, filling 2/3 full.
Bake in 425 oven for 12-15 minutes or until muffins feel firm to the touch.
Unmold and cool to lukewarm on a rack.
Brush on all sides with melted butter.
Roll in cinnamon sugar mixture.
Serve warm.

To make cranberry butter, puree cranberries in blender
Set oven to 350 degrees.
Grease 45 mini muffin tins or line with mini paper liners.
For the topping; mix all ingredients together until blended; set aside.
Place all muffin ingredienrs except the cranberried in a food processor; PULSE 5 times.
Add in the cranberries and process until just mixed.
Fill greased or paper-lined tins about two-thirds full, then sprinkle with prepared topping.
Bake for about 12-15 minutes for mini muffins.
Bake 20 minutes for regular-size muffins.

Half-fill prepared pan with mixture. Make a well in each muffin, drop rounded teaspoons of remaining cranberry sauce into each well; top with remaining muffin mixture. Sprinkle with nuts. Bake for 15-20 mins.
Mix all ingredients, added the berries once everything is mixed and pour into well-greased muffins tins (I only bake in the jumbo pans).

Muffins are done when toothpick comes out clean in center.

Note: When I make cranberry muffins I sprinkle coarse sugar and slivered almonds on top before baking).

Stir well. This should be a wetter muffin batter, if the batter is sticky and thicker add splash of milk until batter becomes thin. Add blueberries. Grease muffin tin with butter, add batter to until the cup is 3/4 full. Bake for 20-25 minutes.
