Cheesecake:

Mix butter and crushed zwieback in bottom of spring-form pan. Mix cream cheese, eggs, 1 cup sugar and 1/2 teaspoon vanilla with electric mixer. Pour into spring-form pan on top of zwiebacks. Cook for 20 minutes at 350\u00b0 or longer if necessary to set, then add next layer. Combine sour cream, 3 tablespoons sugar and 1/2 teaspoon vanilla and pour over cooked cheesecake. Return to the oven at 475\u00b0 for 15 minutes. Cool and refrigerate for a few hours.
Preheat oven to 350 degrees F (175 degrees C). Crush zwieback into crumbs. In a medium bowl, combine zwieback crumbs, 1/2 cup sugar, cinnamon and melted margarine. Mix well and press into the bottom and sides of a 9 inch springform pan.
In a large bowl, cream cottage cheese and 1 1/4 cup sugar until smooth. Beat in eggs one at a time. Beat in the flour and salt. Mix in cream and vanilla.
Pour batter into crust and bake in preheated oven for 1 hour. Cool completely before removing from pan.
Mix the zwieback crumbs with the sugar, ginger and the melted butter.
Reserve a third of a cup of this mixture.
Press the rest firmly on the bottom and about a third of the way up the sides of a 9-inch spring-form pan.
Melt butter and blend with Zwieback crumbs.
Press into 10-inch spring pan.
Combine cream cheese, sugar and vanilla; add egg one at a time, mixing well with electric mixer.
Add sour cream.
Pour into crumb lined pan.
Bake at 350\u00b0 for 45 minutes or until firm in center.
Turn oven off; open door.
Leave cheese cake in oven until cool.

Press into 9-inch spring-form pan (lightly sprayed with fat-free Pam cooking spray).
Set aside.

Refrigerate.
Blend zwieback crumbs, the 1/4 cup sugar and butter in a medium size bowl.
Press firmly over bottom and up side of a lightly buttered 9-inch spring-form pan.
Chill.
