Wash and dry lettuce and tear into large salad bowl.
Cook bacon until crisp, crumble and reserve.
To bacon fat in skillet, stir in 1/4 cup sliced green onions, sugar, salt, pepper, and vinegar.
Cook about 2 minutes.
Pour hot dressing over lettuce. Sprinkle with bacon bits and chopped egg and toss to coat evenly. Serves 2 or 3.

Place eggs in a single layer in a pot; add water to cover eggs plus one inch. Bring to a boil; cover and remove from heat. Let stand 15 minutes.

To the hot bacon drippings, add the vinegar, lemon juice, sugar and pepper. Stir over medium heat until hot.

Core and thinly slice apples.
Place lettuce, apples and celery in bowl.
Cook bacon until crisp; drain and crumble. Reserve drippings from bacon and add vinegar, water, sugar and dressing mix.
Heat to boiling and pour over salad.
Sprinkle with bacon, scallions and pepper.
Toss gently.
Serve immediately.

Dumpling Salad With Bacon

Bring a large pot of water to a boil. Add dumplings and gently simmer for about 5 mins over medium heat. Rinse under cold water, drain and add tomatoes.
Heat 1 tbsp oil in a frying pan and fry bacon until crisp. Remove and drain on paper towels. Add dumplings and tomatoes, toss in bacon fat then remove and set aside to cool.
