Mix all leftover ingredients together.
Delicious served on a plate of lettuce- suppose you could put in a sandwich.
Probably would be best served the next day to let flavors blend - mine didn't last that long.

Quick Chicken Casserole

Boil chicken (no salt).
Bone chicken.
Melt margarine and mix with stuffing.
Mix all ingredients and pour into casserole dish. Save a few stuffing crumbs and sprinkle them on top.
Bake at 350\u00b0 for 45 minutes.

Chicken Casserole

Stew the frying chicken.
Combine meat from 1 medium chicken or 3 cups leftover chicken or turkey, the sour cream and soup. Place in greased casserole.
Top with stuffing mix into which you have tossed the melted margarine.
Bake, uncovered, at 350\u00b0 for 20 to 30 minutes.

Cupboard Chicken Casserole

Prepare Rice-A-Roni according to package directions, except using only 2 cups of water.
Cook just until water is absorbed. In a large mixing bowl, combine Rice-A-Roni, chicken (1 cup cooked, leftover chicken or turkey may be substituted), soup, cheese and broccoli.
Mix well.
Pour into a greased 2-quart casserole dish and bake, covered, for 30 minutes at 350\u00b0.
Remove cover and bake 15 to 20 minutes more.
This serves 4 generously and freezes well.
