Warm Tandoori Chicken Salad (21 Day Wonder Diet: Day 4)

Combine yogurt, coriander and juice in small bowl.
Cook pappadums in microwave oven on medium (50%) for about 40 seconds; break into pieces.
Sprinkle chicken with tandoori owder; spray with cooking oil. Cook chicken on heated grill plate. Slice thickly.
Combine spinach, cucumber and tomatoes in medium bowl; add chicken. Serve salad sprinkled with pappadums, then drizzled with coriander yogurt.

Cranberry & Apple Muesli (21 Day Wonder Diet: Day 17)

Combine yogurt, oats and juice in a small bowl; cover, refrigerate 3 hours or overnight.
Just before serving, stir in remaining ingredients.

Summer Punch

Add 7-Up or diet 7-Up to frozen concentrates as directed on cans.
Combine with apricot nectar and pineapple juice.
Chill. Makes about 3 quarts.
(Soda is used in place of water.)

Hoisin Pork (21 Day Wonder Diet: Day 13)

Spread pork with hoisin sauce. Spray medium frying pan with cooking oil; heat pan, cook pork. Cover pork, stand 5 minutes.
Meanwhile, combine watercress, mint, apple and onion in medium bowl.
Combine juice, soy sauce, ginger and chilli in small jug. Add to salad, toss to combine.
Serve salad topped with sliced pork.

Muesli Muffins (21 Day Wonder Diet: Day 20)

Preheat oven to 180\u00b0C Spray 6 muffin pan holes with cooking oil, or line with paper cases.
Combine muesli, oil, yogurt, egg, flour, rind and spice in medium bowl. Mix with fork.
Divide mixture among pan holes; sprinkle with sugar. Bake about 25 minutes.
Serve 2 muffins each with cheese.

Roast Beef & Coleslaw On Rye (21 Day Wonder Diet: Day 3 )

Combine cabbage, carrot, onion, mayonnaise and juice in a medium bowl.
Divide beef between two slices of bread; top with coleslaw, then remaining bread.

Moussaka Stack (21 Day Wonder Diet: Day 16)

Chicken Waldorf Salad (21 Day Wonder Diet: Day 11)

Bring the water to th eboil in a medium saucepan; add chicken. Simmer, covered, about 10 minutes or until chicken is cooked. Cool chicken in poaching liquid for 10 minutes; drain, then slice thickly.
Meanwhile, combine yogurt, juice and mustard in medium bowl. Add apple, celery, parsley and chicken; mix gently.

Caesar Salad (21 Day Wonder Diet: Day 16)

Preheat oven to 180\u00b0C.
Remove crusts from bread, cut bread into small squares. Place on oven tray; toast about 5 minutes.
Meanwhile, cook prosciutto in medium heated frying pan until crisp. Chop coarsely.
Combine yogurt, juice, anchovy and mustard in medium bowl. Add lettuce; toss to combine.
Serve lettuce mixture topped with toast, prosciutto and egg.

Potato, Tuna & Egg Salad (21 Day Wonder Diet : Day 2 )

Boil, steam, or microwave potatoes and beans, seperately, until tender;drain, cool.
Meanwhile, make dressing by combining yogurt, rind and juice in medium bowl.
Quarter potatoes; add to dressing with tuna, onion and parsley, stir to combine. Serve salad topped with egg.

7-Up Cake

Cream butter and sugar until fluffy.
Add eggs, one at a time, mixing well after each addition.
Gradually mix in flour and 7-Up. Stir in lemon extract.
Pour into a greased 10-inch tube pan. Bake in a preheated 325\u00b0 oven until wooden toothpick inserted in the center comes out clean, about 1 1/2 to 1 3/4 hours.

7-Up Pound Cake

Preheat oven to 350\u00b0.
Cream margarine or butter, oil and sugar.
Add eggs one at a time.
Mix in flour, alternating with 7-Up and flavorings.
Bake in greased and floured tube or Bundt cake pan for 1 hour and 15 minutes or until cake tests done by inserting a toothpick.
Serves 16 to 24.

7 Day Pickles

First Day:
Cover whole cucumbers with boiling water; let set overnight.

Home Canned Tomato Juice

After tomatoes are quartered, cook for 5 to 10 minutes longer. Press through sieve.
Measure 7-quarts juice.
Add sugar, vinegar and salt to juice.
Mix well and pour into sterilized jars.
Seal. Process in pressure cooker for 10 minutes at 5 pounds pressure.
