Stir together 1/4 cup sugar and warm water until sugar dissolves. Add pecans; soak 10 minutes. Drain, discarding syrup.
Combine 2 tbsp sugar, chili powder, and red pepper. Add pecans, tossing to coat. Place pecans on a lightly greased baking sheet.
Bake at 350 degrees for 10 minutes, stirring once halfway through.

In a large skillet, heat butter over medium heat. Add onion and saute for 1-2 minutes.

Place fish in a large plastic bag. Add olive oil and marinate for one hour.
Remove fish from marinade and salt to taste. Cook on preheated grill for 8-10 minutes.
Combine chili sauce and Tabasco Sweet & Spicy sauce. Add a dash of regular Tabasco sauce if desired for more heat.

Southern Sweet Potato Bread With Pecans

Preheat oven to 325 degrees F ( 165 degrees C ). Grease an 8x4 inch loaf pan.
In a medium bowl, stir together the flour, baking powder, salt, nutmeg cinnamon, and sugar. Add the eggs, oil, and milk; mix until well blended. Finally, stir in the mashed sweet potatoes, pecans, and golden raisins. Pour the batter into the prepared pan.
Bake for 70 minutes, or until a toothpick inserted comes out clean. Allow bread to cool in the pan at least 15 minutes before removing. For best flavor, store overnight before serving.
