Soak the dried fruit in the brandy (or rum if you're using that) overnight.
Preheat oven to 300\u00b0F and core the cooking apples, leaving them whole and unpeeled.
Mix the sugar, butter and allspice in to the fruit and brandy mixture then stuff the cavity of the apples with it.
Put the apples in a dish, cover with foil and bake for 40 minutes, then remove the foil and bake for a further 10 minutes or until apples are soft.

Coat an 11x7x2 baking dish with cooking spray; pour water into dish.
Peel, core and slice apples. Arrange apple slices in prepared dish; coat lightly with vegetable cooking spray.
Combine brown sugar, flour, cinnamon and nutmeg; cut in butter to resemble coarse meal. Sprinkle evenly over apples.

Peel, core and cut apples in half.
In a skillet melt butter over medium heat.
Stir in the sugar, cornstarch and cinnamon; mix well then add in water.
Add in the apples to the sauce; cover and cook over medium heat, occasionally spooning the sauce over the apples as they cook.
Cook for 12-15 minutes until the apples are fork-tender and the sauce is thick.
To serve; place two apple halves in a dish, and ladle approximately 1/2 cup butter/cinnamon sauce over each serving.

Sweet Potato-Orange-Apple Casserole

Remove skin from cooked sweet potatoes and slice potatoes 1/2 inch thick.
Peel, slice and core cooking apples.
In a buttered casserole dish, arrange layers of sweet potatoes and apples.
Dot each layer with butter, using about 1 tablespoon.
Combine brown sugar and cinnamon and sprinkle over each layer.
Pour orange juice over all.
Bake at 375\u00b0 for 15 minutes.
Remove from oven and dot with additional tablespoon butter.
Place in oven again and bake 15 minutes.

Place sliced apples in a lightly greased 11x7 inch baking dish; set aside.
Melt butter in a saucepan; add in marmalade and remaining ingredients; stir to combine.
Bring to a boil over medium heat, stirring constantly.
Pour mixture over apples.

Place apples in 2-quart casserole.
Combine the raisins, brown sugar, cinnamon and nutmeg.
Spoon into center of apples.

Poached Apples In Calvados

Remove core from apples & peel if desired (I would prefer them unpeeled).
Combine water, Calvados, sugar + cinnamon stick in med saucepan & heat till sugar is dissolved.
Add apples & cook over low-heat till apples are tender (about 25 min) & spoon liquid over apples occ. Carefully remove apples w/a slotted spoon, allow excess liquid to drain & place on individual serving plates.
Cont cooking liquid till reduced by half, spoon over apples, sprinkle w/almonds & serve immediately.

Super Apples

Put apples in baking dish.
If using fresh apples, cover with the water and lemon juice.
If using canned apples, omit water and lemon juice.
Mix all other ingredients together and spread over apples.
Cover dish.
Bake in 350\u00b0 oven for about 45 minutes.

Apple Crisp

Fill a 9 x 13-inch greased baking dish 1/2 to 3/4 full with cooking apples.
Mix 1/2 cup white sugar and 1/2 teaspoon cinnamon; sprinkle over apples.
Mix brown sugar, cooking oats, flour and melted margarine in amounts stated, then press and place over apple mixture.
Bake in a 350\u00b0 oven until brown.
If desired, can serve with a scoop of vanilla ice cream.

Fresh Apple Cake

Mix cooking apples, raisins, nuts and sugar; let stand 1 hour. Stir often.
Mix together flour, nutmeg, cinnamon, salt and soda. After one hour, mix and beat well cooking oil, vanilla and 2 eggs. Add this to apple mixture, then add sifted ingredients to apple mixture.
Beat by hand until well moistened.
Grease and flour 3 loaf pans.
Fill about half full or divide mixture evenly.
Bake at 350\u00b0 for 1 hour 15 minutes.
Test with toothpick.

Cinnamon-Crusted Baked Apples

Coat an 11 x 7 x 2-inch baking dish with cooking spray; pour water into dish. Peel, core and slice apples.
