Sweet Potatoes And Apples - cooking recipe
Ingredients

6 medium sweet potatoes (3 1/2 lbs)
1teaspoon salt
3/4 cup butter or margarine
1 cup light or dark brown sugar, firmly packed
1 1/2 cups orange juice
2 tablespoons coarsely grated orange zest
1/4 teaspoon salt
2 large tart cooking apples (Granny Smith), peeled, halved,
cored and cut in 1/4 inch thick slices

Scrub and wash sweet potatoes. Place in large saucepan with 1 tsp. salt and water to cover. Over high heat, bring water to boiling, reduce heat, cover and simmer 25 minutes or until potatoes are crisp-tender.
Drain potatoes and let them cool. Peel and cut crosswise into 1/2 inch thick slices. Set aside.
Preheat oven to 400 degrees.
In a medium sized skillet over moderately high heat, melt butter. Add brown sugar, orange juice, orange zest and 1/4 tsp salt. Bring to a boil, stirring constantly until sugar is completely dissolved. Simmer uncovered for 10 minutes to thicken the sauce.
Add apple slices to the sauce, simmer uncovered, stirring occasionally and turning the slices once. Cook for 5 minutes Remove apples from sauce and set aside.
In a 2 qt. shallow baking dish, arrange the sweet potato and apple slices in alternate rows. Spoon half of the sauce evenly over all. Reserve remaining sauce. Cover with aluminum foil. ( You may refrigerate for a day and bake after bringing dish back to room temperature.)
Bake for 25 minutes (400 degrees) Remove foil, baste with remaining sauce. Bake uncovered 15 - 20 minutes more.
