Prepare sauces and set
aside.
Cook noodles in boiling water to which you add
olive
oil
to prevent sticking.
When done to \"al dente\", prepare a
large
baking
pan
and place a layer of sauce, sprinkled
with
a
little Parmesan cheese and pepper. Place a layer of white sauce and repeat process until all ingredients are used, ending
with red sauce.
Bake for 20 to 30 minutes or until top
of lasagne is golden.
Let stand 5 minutes before serving.
Makes 8 servings.
Preheat a grill or grill pan to medium-high heat. Brush vegetables with oil. Grill for 2-3 mins each side, until tender.
For the white bean dip, place beans, garlic, 1/3 cup of the oil and lemon juice in a food processor. Process until smooth and creamy. Season to taste. Spoon into a serving bowl. Drizzle with remaining 1 tbsp oil and sprinkle with paprika. Serve vegetables on a platter with white bean dip.

In large skillet, melt butter.
Add mushrooms and onion.
Cook 5 minutes or until tender.
Add ham and mix well.
Prepare White Sauce Base, using 1/4 cup additional milk.
Stir in Parmesan cheese.
Pour over ham mixture and heat until bubbly.
Serve over hot noodles.
Garnish with parsley and additional grated Parmesan cheese, if desired.
To make the dipping sauce: Add salsa to sour cream and mix; set aside.
Place one tortilla on baking tray and layer on cheese and vegetables. (Note: a sprinkling of ancho, chipotle or other chile powder at this point is good.)
Place the second tortilla on top. Repeat with remaining tortillas. Broil until cheese is melted. Serve with Mexican Dipping Sauce.

When vegetables
In a saucepan, melt the butter over medium heat. Stir in the flour and cook 2 minutes to cook away the raw taste of the flour.
Add the milk all at once. Stir well, and continue heating until mixture comes to a boil. It will thicken as it heats.
Season to taste with salt and white pepper.
To make Veloute Sauce: Substitute the chicken stock for the milk.
To make Cheese Sauce: Stir in shredded cheese of choice into the cooked Basic White Sauce and stir until melted.

Alabama White Sauce: Mix ingredients together in
Place broccoli stem end down in boiling salted water. The heads should not be in the water. Cook uncovered 10-20 minutes.
Turn broccoli so that the entire broccoli is under water, cooking another 5 minutes. Drain.
To make white sauce - melt butter and add flour, gradually blend in milk stirring constantly.
Reduce heat and cook an additional 3 minutes. Serve over broccoli.
Arrange 8 slices of farmer's bread on cookie sheet.
Cover farmer's bread with 2 slices each of ham; top with 1/2 cup Monterey Jack cheese.
Salt and pepper all 8 slices.
Close sandwiches.
Spoon white sauce over each sandwich.
Sprinkle with remaining cheese.
Broil for 4 minutes in oven until bubbly. Serve at once.

Add pimiento and cook 7 minutes.
Drain.
Put in a buttered baking dish and pour White Sauce over all, mixed with cheese and salt.
Bake in a moderate oven until potatoes are soft.

Add the first 10

Stir in meat, 1 tablespoon minced onion and parsley.
Season with salt and pepper.
Cover and chill for 2 hours.
Divide mixture into 12 equal parts and shape each into a ball.
Beat egg and water until blended.
Dip each ball into the egg mixture, then roll in bread crumbs until well coated. Cover and chill again for about 2 hours.
Cube cheese and put in sauce pan.
Over medium-low heat, add just enough milk to melt the cheese to the desired consistency, stirring constantly so cheese doesn't burn.
Blend in finely chopped jalapenos (or green salsa) to taste.

To make the sauce, in a heavy saucepan melt the butter and heat WITHOUT browning.
Using a wire whisk, stir in the flour.
Cook for 1 to 2 minutes over low heat, then remove from the burner and gradually stir in the warm milk.
Move the pan back to the heat and bring to a boil, stirring steadily for a smooth sauce.
Add a pinch of salt and white pepper, and grate a little nutmeg for a nice flavor.
