In a bowl, combine meat, crumbs and milk.
Mix well.
Shape into 36 meat balls.

In a 12 x 7 1/2 x 2-inch baking dish, combine pineapple juice, soy sauce, oil and seasonings.
Add meat balls.
Cover.
Refrigerate overnight. Turn once.
Drain meat balls.
Keep marinade.

THE MAIN DISH:
Rub salmon with sugar
Brown ground meat and onion together.
Drain fat, then add Ro-Tel tomatoes, soup and refried beans.
Put in a casserole dish and bake at 200\u00b0 for 2 hours.
Top with green onions, olives and cheese.
Serve in a chafing dish with dip size corn chips or favorite kind of chip.
This is also a good main dish.
To prepare the Enchilada sauce:
Cook onions and peppers in oil.
Add tomatoes and seasonings.
Simmer well.
adjust seasonings to suit your taste.
To prepare Pollo sauce:
Mix ingredients and add to Enchilada sauce.
To prepare main dish:
Saute chicken and mushrooms in butter. Do not fuly cook the chicken. This will be done when you reduce the wine.
Season to taste.
Add sherry and green onions.
Reduce.
Add the prepared Pollo sauce and lemon.
Heat thoroughly.
Serve with either white or Spanish rice.
Prepare tortellini according to pkg directions. Combine vegetable stock, garlic, artichoke hearts, mushrooms, pepper and parsley in a medium heavy saucepan.
Bring to a boil, reduce to simmer and cook about 5 minutes. Remove from heat and stir in remaining ingredients.
Toss with the cooked pasta.
Stir in a few copped sun-dried tomatoes if desired. Serve hot as a main dish or side dish.
Serve cold as a main dish or light salad.
Peel

Boil

until tender.

water.
In
a 5-quart saucepan, put the meat, then the fried eggplant.
Wash

cups of rice with water, then put it over
the eggplant.
Add allspice and salt. Add 3 cups of water (the one you boiled the meat with).
Bring to a boil. Then over medium
heat,
cook
until rice is done. In a serving tray, turn\tthe
contents of the saucepan upside-down and eat! Add fried pine nuts on top.

Fry bacon pieces.
Remove bacon and saute onion, green onion and carrot.
Leave crisp.

Combine beef, egg, 1 tablespoon cornstarch, salt, onion and pepper.
Form into balls.
Brown in fat; drain.
Cook oil and pineapple juice over low heat for a few minutes.
Add cornstarch, soy sauce, vinegar, water and sugar.
Cook until thick.
Add meat balls and pineapple.
Good cover rice when used as a main dish.
Cut buns in half. Put meat slice in center of bun. Place in Pyrex dish. Sprinkle cheese over and finely chopped onion. Mix eggs and milk together, then pour over buns and bake in 350\u00b0 oven for 45 minutes. Serve with salad and French fries.
Boil squash and onion until tender.
Brown ground meat; drain. Mix remaining ingredients together; drain squash.
Layer: squash, sour cream mixture and ground meat.
Repeat layers.
Bake 30 minutes at 350\u00b0.

In a 5-quart Dutch oven over medium-high heat in 2 tablespoons hot salad oil, cook zucchini, onions, garlic and 1/4 teaspoon salt until tender-crisp.
Discard garlic; remove mixture to bowl.
In 2 more tablespoons hot salad oil, stir broccoli and cauliflower; add water and 1/4 teaspoon salt.
Cover; cook until tender-crisp, stirring occasionally.
Return zucchini mixture to Dutch oven; add remaining ingredients.
Cover; cook 5 minutes or until hot. Makes 6 main dish servings.
Cook macaroni, rinse and drain.
Brown meat with peppers, onions and mushrooms, adding olives when done.
Drain excess fat. Add all to macaroni with tomato paste and 1 can water plus cheese. Season to taste with salt and pepper. Bake 2 hours at 300\u00b0, covered.
Uncover last half hour.
Use large skillet.
Cover meat and potatoes with milk.
Cook on low heat.
Cover, low boil (as milk will boil over).
Cook until milk reduces and is absorbed, about 45 minutes (keep watch). Press together; light brown crust will form.
Excellent use of leftover meats.
After cutting off inedible tips of vegetables, wash and slice them into 1-inch squares. Saute vegetables in half of the oil and remove them from the frying pan. Saute onion and tomatoes in the remaining oil, and season with parsley, salt, and pepper. Put everything in a stock pot with a cup of water, cover tightly, and simmer until almost all moisture has cooked away. Serve hot, accompanied by steak, meatballs, or any other main dish.
Add jar of mushroom and parsley, if so desired, makes it much better.
Put all ingredients together and stir in a casserole or crock-pot.
Cover and cook at 325\u00b0 for 3 hours.
Be sure container is large enough so it doesn't run over.
Great over large egg noodles or mashed potatoes as a main dish.
In a large skillet, cook ground beef until light brown; drain, leaving in skillet.
Sprinkle beef with salt and pepper.
On top of ground beef, layer half each of the cheese, celery, olives and noodles.
Repeat.
Blend tomatoes, sauce mix from main dish mix and chili powder.
Stir in water.
Pour tomato mixture on noodles in skillet.
Heat to boiling.
Reduce heat, cover and simmer until noodles are tender, about 10 minutes.
Serves 6.
Cook the onions in the oil until tender.
Add the tomatoes, garlic and spice mix; simmer about 5-8 minutes to blend the flavors.
Wait till the last minute to first wash, then dry and cut the okra (about 1/4 inch) to help prevent bleeding.
Add the okra and peppers to the pot, cover and simmer until the okra is tender.
For a main dish, add smoked sausage, or cubed, cooked chicken or pork and serve over rice.
This is also excellent with black beans mixed in!
