Easy Low Fat Mushroom Sauce

Saute the mushrooms in a non stick pan for 2-3 minutes until softened.
Add the sour cream, yoghurt and black pepper.
Mix well and heat through.
Serve warm as required.

Preheat Oven to Moderate.
Grease & line pan(s).
Beat butter, vanilla & sugar in small bowl until light and fluffy; beat in eggs one at a time.
Stir in flour & milk (in 2 batches).
Spread into tin, and cook for approx 15 - 25 min (until skewer comes away clean).
Let stand for 5 minutes, then turn onto wire rack.
Serves 6-8.
Cut in half and spread middle with beaten low fat cream, and halved strawberries. Cover top of cake with cream and add strawberries and sprinkles.

Low-Fat Creamed Chicken(For Sandwiches)

Drain chicken and place chunks in Corning Ware dish on stove. Break up chicken into small pieces (shred) while heating on medium-low.
When chicken is shredded, add soup, dill weed and salt and pepper to taste.
Continue cooking on medium-low to medium for 10 minutes, stirring frequently.
Allow to cool slightly and serve on buns.
Prep/Cook time:

Preheat the oven. I do mine to 160 degrees but it is fan-assisted, so if yours isn't I would do 180 or even 200.
Use the low-fat spread to grease an 8-inch loaf tin.
In a large bowl, whisk the egg-whites to a froth.
In another bowl, stir the flour, mango puree, vanilla essence and egg yolk together.
Fold the whisked whites into this mixture.
Pour into the greased tin and bake for 30-40mins.
Let cool, then slice.

Preheat oven to 400 degrees. Grease 9 inch pie plate. Cook ground beef and onion until beef is brown. Drain; stir in salt. Spread into pie plate. Sprinkle with cheese. Stir remaining ingredients in bowl until blended. Pour into pie plate. Bake for 25 minutes or until knife inserted in center comes out clean.

Easy Low-Fat Chocolate Chip Cheesecake

Preheat oven to 350 degrees.
With mixer, beat cheese until fluffy, gradually beat in sweetened condensed milk until smooth. Add egg and vanilla; mix well.
Toss chips with flour and stir into cheese mixture.
Pour into crust.
Bake for 35 minutes or until center springs back when touched.
Serve chilled.
Refrigerate.

Easy Low-Fat Dip

Mix and refrigerate until ready to use. Great dip for vegetables and chips.

Easy Low Fat S'Mores (Smores)

Roast marshmallows over open flame (or you can break a full graham cracker sheet in half, place 1 marshmallow on top of it, and put it in the middle of the microwave for 15 seconds, skip to step three if you used the microwave).
Break a full graham cracker sheet in half and place a roasted marshmallow on top.
Drizzle desired amount of Hersey's chocolate syrup on top of the roasted marshmallow.
Sandwich with the other half of the graham cracker sheet.
Enjoy in moderation! :-D.

Easy Low Fat Mayonnaise

Put everything into microsafe jug and mix. Put lid on jug with pourer open.
Micro on high for 2 minutes Whisk, then micro again 2 minutes Whisk again, and then finally micro for yet another 2 minutes
The mix will have thickened. Now whisk to give a smooth custard-like texture. Stir occasionally as it cools.
Transfer to a sealed container and chill. Before using, stir each time.

Easy Low Fat Salsa Cream Cheese Dip

Combined the cream cheese and sour cream together in a small bowl. Place the mixture in a serving dish.
Add salsa on top of mixture.
Add remaining ingredients on top of the Salsa.
Chill for 30 minutes or longer before serving.

Easy, Low-Fat Black Bean Soup

Using a food processor pulse the onion until minced.
Drain and rinse the black beans.
Add to the food processor with the cream cheese.
Pulse until pureed.
Dilute wtih chicken broth to your desired thickness.
Transfer to a medium sauce pan and heat over low heat until thoroughly heated.
Garnish with sour cream and chives.
