For the burgers, heat half the oil in a frying pan on a medium heat. Saute onion 1-2 mins. Transfer to a bowl to cool slightly. Add turkey, breadcrumbs, rosemary and cranberry sauce. Season to taste. Mix well and form into 8 flattened patties. Heat remaining oil in a frying pan on high. Cook patties 3-4 mins each side, until cooked through. Top each with a slice of Brie.

Unmold onto a plate of greens or serve directly from bowl. This is especially good with turkey or chicken. For all festive occasions.
