Cranberry Turkey Burgers With Brie - cooking recipe

Ingredients
    2 tbsp olive oil
    1 None small red onion, finely chopped
    1 lb ground turkey
    2 oz fresh breadcrumbs
    2 tbsp chopped fresh rosemary leaves
    2 tbsp cranberry sauce, plus extra to serve
    6 oz Brie cheese, sliced
    8 None bread rolls, halved, toasted
    1/3 cup mayonnaise
    3 oz arugula
Preparation
    For the burgers, heat half the oil in a frying pan on a medium heat. Saute onion 1-2 mins. Transfer to a bowl to cool slightly. Add turkey, breadcrumbs, rosemary and cranberry sauce. Season to taste. Mix well and form into 8 flattened patties. Heat remaining oil in a frying pan on high. Cook patties 3-4 mins each side, until cooked through. Top each with a slice of Brie.
    To assemble, spread rolls with mayonnaise and fill with burgers and arugula. Serve with extra cranberry sauce.
