Wash and sort beans; simmer, covered, in water for 30 minutes. Drain; reserve stock.
Combine remaining ingredients and Cowboy bacon or salt pork cut into 1/2-inch pieces.
Place in 2 1/2-quart casserole; add beans.
Cover with stock.
Bake, covered, at 250\u00b0 for 7 to 8 hours.

Brown beef, bacon and onion in a large
Preheat the oven to 325 degrees F (165 degrees C).
Combine pork and beans, bacon, onion, green bell pepper, ketchup, and brown sugar in a 9x13-inch baking dish. Cover with aluminum foil.
Bake in the preheated oven for 2 hours, stirring every 30 minutes. Remove aluminum foil and cook 1 hour more, stirring every 15 minutes, until beans are thick and caramelized.
In large bowl, place beans and water to cover 2 inches above them; set aside to soak overnight.
Or, to quick soak, place beans and water in 5-quart Dutch oven.
Heat to boiling over high heat. Boil beans 2 minutes.
Remove from heat.
Cover and let beans stand 1 hour.
After beans have soaked, drain in colander and rinse with cold water.
In a saucepan, heat oil over medium-high heat. Cook pepper, onion and garlic for 2 mins, or until softened. Add chorizo and cook for 2 mins more, or until browned. Stir in baked beans, white beans and pork rub. Reduce heat, cover and simmer for 15 mins, stirring occasionally.

Cook bacon in a skillet over medium
In casserole dish, layer beans, onions, bacon, beans, onions....etc.
Add sugar and vinegar to bacon drippings until dissolved.
Pour over layered green beans and refrigerate overnight.
Bake at 350 for 45 minutes.
Cook bacon in a skillet; remove bacon and break into pieces. In same skillet, cook onion in bacon grease until browned. After browning the onion, pour off most of the bacon grease. Add the bacon, beans, brown sugar and ketchup to the skillet. Stir well, cover and simmer slowly for a few minutes or combine all ingredients in a baking dish and bake in oven at 300\u00b0 for 1 hour.
Heat oven to 350\u00b0.
