Preparing the Dumplings and
Combine the maple syrup, pineapple, ham glaze, brown sugar, and cinnamon in the crock pot. Mix well.

Coat large skillet with no-stick cooking spray. Heat skillet over medium heat. Saute ham, 1/3 at a time, 15 seconds or until ham is lightly browned. Remove from skillet and place in large bowl.
Heat oil in same skillet over medium-low heat. Add onion and green pepper; saute 7 minutes or until tender.
Stir in ham glaze, undrained pineapple, brown sugar and vinegar. Heat through. Pour over ham in bowl; toss to coat. Serve on rolls.

Place ham in a shallow baking pan. Mix sugar and cornstarch in a saucepan. Stir in water and butter. Cook, stirring constantly, for 5 minutes. Remove from heat. Stir in raisins and wine. Pour over ham and bake, uncovered, at 350\u00b0 for 45 minutes or until tender.
Unwrap ham and place in roasting pan with lid.
Place your pineapple rings on top, securing with toothpicks.
Pour the can of diet Pepsi over top of the ham, cover and bake approximately 4.5 hours or until internal temp reaches 140\u00b0F.
Remove from oven and let rest at least 15 minutes.
Slice and serve.
Note: the cooking time includes the resting time. I would think that this would turn out to be lower carb and sugar than the normal baked ham with the fruity sauces.
Combine cocktail sauce, brown sugar and mustard in baking dish.
Fold in ham until well covered with mixture.
Bake in preheated oven at 375\u00b0 for 12 to 15 minutes (until mixture boils). Let cool 5 minutes and serve warm.
Serve cool the next day over white bread.
Makes a great cold sandwich.

Combine ground ham, brown sugar, eggs and bread crumbs.
Mix to a slightly wet consistency.
Add more sugar or egg, if needed. Bake in a loaf pan, coated with butter or margarine.
Bake 45 minutes or until firm and slightly brown.
Slice and serve with Chef Mate or La Choy sweet and sour sauce.
