Parmesan Broccoli Balls

Cook frozen broccoli according to package directions; drain well.
Combine all ingredients, mixing well.
Pour mixture into a sheet pan and spread evenly; Refrigerate.
When firm, roll mixture into small (1 inch) balls.
Roll balls in Parmesan cheese.
Freeze.
To serve: Put frozen broccoli balls in a preheated 350 degree F. oven and bake for 35-40 minutes, or until golden brown.

Saute onion and celery in a small amount of fat in a skillet.
Combine sauteed vegetables, rice, broccoli and butter.

Amy'S Cheezy Broccoli Balls

Squeeze the broccoli in paper towels to get as much of the water out as possible.
Whisk the eggs lightly and stir together with the broccoli and cheese and enough flour to make the dough hold together.
Cover and refrigerate at least 2 hours or until stiff enough to roll into balls.
Roll the mixture into balls using 1 tbsp of the mix. Roll each in the bread crumbs.
Heat a large pan with enough oil to deep fry to 375 degrees.
Drop a few balls in at a time, making sure they do not stick together or touch. Fry until golden brown.

Mix all ingredients except for Swiss or Cheddar cheese and broccoli.
Add well drained broccoli and mix well.
Make into balls using ice-cream scoop (this can be frozen at this time).
Bake at 350\u00b0 for 15 to 20 minutes.
Remove and add cheese (if you like, you can also add cracker crumbs or onion rings at this time).
Place back in oven and bake until cheese is melted.
I usually make half of mine with Cheddar and half with Swiss cheese.
You can also make this into a casserole instead of the balls.

Shape into small balls.
