Whole Boneless Ham In Pastry Crust

Place ham in a shallow roasting pan; add water. Cover with aluminum foil. Place in a cold oven and set temperature to 325\u00b0F; bake for 30 minutes.
Remove ham from oven and drain. Cool slightly.
Meanwhile, roll out pastry dough into a long rectangle 3/8-inch thick. Spread orange marmalade over ham. Place ham on one side of dough and fold over to enclose ham. Brush dough with egg. Return to pan.
Increase oven temperature to 375\u00b0F and bake for 45 minutes. Let stand for 15 minutes before slicing.

Pineapple Glazed Ham

Preheat oven to 350\u00b0F. Place ham on a foil-lined baking tray.
In a small saucepan, combine preserves, mustard, garlic, orange zest, pineapple juice and brown sugar. Bring to a boil and cook until reduced to 3/4 cup, stirring occasionally. Season. Brush over ham and bake for 1 hour, basting occasionally. Brush with pan juices.
Slice and arrange on a serving platter. Garnish with orange slices, cinnamon sticks and fresh herbs.

Add a few whole cloves to the ham.
Make a paste of brown sugar and mustard and spread over the ham.
Heat up your coals and bank in grill.
Place ham on grid and cover grill for 9 minutes per pound.
Cool for 5 to 10 minutes and slice to desired thickness.

For glaze, in a small bowl stir together well preserves, almonds, raisins and lemon juice. Place ham in a shallow roasting pan. Bake in a 325 degree oven for 2 hours (allow 15 minutes per pound) or until thermometer registers 140 degrees. Spoon glaze over ham once or twice during the last 30 minutes of cooking time. Slice thinly to serve. Serves 32.

Slice diagonally both ways lightly on top of ham.
Put in roasting pan; sprinkle with cinnamon and ground cloves and cover with 1 cup water.
Seal and cook for 30 minutes at 350\u00b0.
Mix the rest of ingredients in saucepan (not including pineapple, include only juice from pineapple) and bring to boil.
Pour over ham and re-seal with foil.
Continue to cook 45 more minutes at 350\u00b0. Cool for a few minutes and slice.
Place pineapple on top and serve.
