In a stockpot over low heat, melt butter.
Saute onions, carrots and celery until tender, about 5 minutes.
Stir in tomatoes, turkey and parsley. Add stock and stuffing.
Bring soup to a boil; reduce heat and simmer, partially covered for 45-60 minutes
Place hot noodles in a large deep bowl; cover with soup.

Cut up any leftover turkey into bite size bits. Heat the soup slowly and add the cut up turkey.
Also add any leftover gravy or dressing.
Add the milk -- a little at a time.
Heat thoroughly and serve over mashed potatoes.
I always serve this with a veggie and leftover cranberry sauce. Yummy!
Remove the meat from the bones and put through coarse blade of grinder together with onion. Season to taste with salt and pepper, some leftover gravy and stuffing. To each 2 cups of meat add 1 beaten egg. Bake in a loaf pan in a moderate oven (350*) for 1 hour. Serve with hot turkey gravy.
In a casserole, layer all leftovers (turkey, potatoes, stuffing and gravy) until all ingredients are used.
Bake at 350\u00b0 for 30 minutes.
Break frame in half.
Place in a Dutch oven with water, 1 quartered onion and salt.
Bring to a boil; reduce heat and simmer 1 1/2 hours, covered.
Remove frame.
Cool.
Strain broth and return to Dutch oven or large pot.
Add turkey meat from frame. Add broth, pepper and tomatoes.
Stir in vegetables.
Bring to a boil; reduce heat and simmer for 45 to 50 minutes.
Stir in uncooked noodles; simmer 15 minutes.
Serve.
Great for leftover turkey!
Preheat oven to 425\u00b0F
Cook the leek in the oil and butter until softened.
Add the thyme, turkey and leftovers and season.
Cook for 2-3 minutes. Take off the heat.
Roll out the pastry.
Place on a baking sheet and pile the turkey mixture over one half leaving a 1in rim on the three cut edges.
Scatter over the cheese and spoon the cranberry sauce on top.
Brush the three cut edges with egg and fold the pastry over.
Press to seal. Prick all over with a fork.
Brush the top with beaten egg.
Bake for 15-20 minutes.

For the marinade, mix together vinegar, sugar, garlic and chili pepper in a bowl. Stir until the sugar has dissolved. Place turkey and ham in a shallow bowl and pour in vinegar mixture. Set aside.
For the dressing, whisk together honey, rice vinegar, peanut oil and sesame oil in a bowl.
To assemble, toss together spinach, onion, herbs, drained meats and mango. Drizzle with dressing and sprinkle with sesame seeds to serve.
Unroll the crescent rolls and separate into rectangles. Press the seams together to form four rectangles.
Spread cream cheese on each rectangle. Shred turkey over cream cheese and top with cranberry sauce. (You can also add some dried cranberries too.) Roll up the rectangle from the short side and press the seam to seal.
Cut each roll into 4 or 5 pinwheels, and place on a lightly greased cookie sheet.
Bake according to package directions (or 350\u00b0F) for 12 to 15 minutes or until light golden brown. Serve warm.
