Turkey Soup(Leftover Turkey) - cooking recipe

Ingredients
    1/2 stick butter
    1/2 c. chopped onion
    1/2 c. chopped or shredded carrots
    1/2 c. chopped celery
    1 c. green chopped pepper
    3 apples, peel and chop
    1 qt. tomatoes or tomato juice
    5 c. turkey stock or bouillon
    1/3 c. flour mixed in 1/2 c. cold water
    1/2 tsp. curry powder
    dash of nutmeg or mace
    2 or 3 whole cloves
    salt and pepper to taste
    1 1/2 to 2 c. cooked rice
    1 1/2 to 2 c. (or more) cooked bite size turkey pieces
Preparation
    Melt butter and saute
    onion,
    carrots and celery until celery and
    onion are limp and transparent.
    Add chopped green peppers, apples,
    tomato juice, turkey stock, flour and water mixed,
    curry powder,
    nutmeg, whole cloves, salt and pepper. Simmer until
    all vegetables
    are done.
    It can go for hours, but should simmer
    at least
    1
    1/2 to 2 hours on low simmer. Remove cloves and add cooked rice and turkey. Heat thoroughly. Makes 8 to 10 generous servings.
