Turkey And White Bean Burgers - cooking recipe

Ingredients
    1 can (14 oz) white beans, drained and rinsed
    1 1/2 cups chopped leftover roast turkey, chicken or pork
    1 1/2 cups leftover roasted root vegetables, mashed
    2 None green onions, thinly sliced
    2 tbsp cranberry sauce, plus additional, to serve
    1/2 cup flour
    2 None eggs, lightly beaten
    1/2 cup dried breadcrumbs
    None None Vegetable oil, for shallow frying
    8 None bread rolls, split
    None None Arugula, sliced Brie, Camembert or goat cheese, and mayonnaise, to serve
Preparation
    Mash beans in a large bowl. Stir in turkey, vegetable mash, onions and sauce. Season to taste.
    Shape mixture into 8 even-sized patties. Dust in flour, shaking off excess. Dip into egg and toss in breadcrumbs to coat. Place on a tray and refrigerate for 10 mins.
    Heat oil in a large skillet on medium heat. Cook patties for 3-4 mins each side, until golden. Drain on paper towels.
    Fill rolls with arugula leaves, cheese, additional cranberry sauce and patties. Top with a dollop of mayonnaise.
