Jumbo Shells With Asparagus, Prosciutto, Ricotta Cheese And Three Cheese Sauce

Three Bean Vinaigrette

Drain cans of three bean salad, reserving liquid from 1 can. Discard remainder.
Combine beans, reserved liquid, rice, kidney beans, artichoke hearts, pepper and salt in large bowl.
Toss and chill.
Serve over lettuce leaves.
Makes 6 servings.

Layered Salad

This recipe was in the drawer for some years, but I'm fairly sure it was in one of the \"Three Rivers\" cookbooks.
As I mentioned in some other recipes, if you don't have them, get them.
Anyhow, it's a great dish.
The marinating makes the meat tender and very tasty.
Since the steak varies in thickness, you end up with a choice of well done to medium, or even rare.

Almost Fat-Free Cornbread

Preheat oven to 450\u00b0. Spray skillet with Pam (or substitute). Heat skillet. Combine all ingredients. Pour into skillet. Bake 30 minutes. (The only fat is in the meal and Pam spray.)

Mom'S Cornbread

Heat oven to 500\u00b0. Place margarine in a medium sized iron frying pan and melt. Mix meal and milk together and pour melted margarine into it, stirring well. Pour in pan and bake for about 15 minutes or until golden brown.

Three Rivers Chicken

Preheat oven to 375\u00b0.
Brown chicken in oil; sprinkle with pepper.
Remove from pan and blot with paper towel.
In a lightly greased casserole dish, spread asparagus spears and place chicken on top of spears.
Mix next 4 ingredients together in a small bowl and pour over chicken-asparagus.
Bake, covered, for 30 minutes. Uncover and sprinkle cheese over top.
Bake for 5 minutes.
Serves 4.

Low-Fat Jalapeno Cornbread

Mix all ingredients except cheese into batter.
Pour 1/2 batter into greased 10-inch heavy skillet.
Sprinkle 1/2 of cheese over batter.
Pour in remaining batter and sprinkle remaining cheese on top.
Bake in 425\u00b0 oven for 25 minutes.
Serves 6 to 8.

Mix the three ingredients together well.
Make small ball shapes about the size of marbles or roll in long rolls about 1/2-inch in diameter and slice and bake as needed at 400\u00b0 for 10 to 20 minutes.
Can be frozen before baking.

Pumpkin Pie(St. Marks Cookbook)

Mix ingredients together and pour into unbaked 9-inch pie shells.
Bake at 350\u00b0 about 45 minutes.
Before baking, sprinkle cinnamon over tops.
Makes three 9-inch pies.

Pistachio Nut Cake("A Favorite From The '76 Cookbook.")

Mix first three dry ingredients together.
Next beat eggs and then add oil or combination and club soda.
Combine the liquids and mix well with the dry ingredients.
Take 1 cup of the batter and mix with chocolate syrup.
Add nuts to the other batter and pour into greased and floured tube pan.
Pour chocolate mixture on top. Bake 50 to 60 minutes at 350\u00b0.
