Low-Fat Jalapeno Cornbread - cooking recipe

Ingredients
    3 c. Three Rivers corn meal mix
    1/2 c. Egg Beaters
    1 medium onion, grated
    1 c. buttermilk
    1 small can cream-style corn
    1/3 c. jalapeno peppers, finely chopped
    1 c. grated low-fat sharp Cheddar cheese
Preparation
    Mix all ingredients except cheese into batter.
    Pour 1/2 batter into greased 10-inch heavy skillet.
    Sprinkle 1/2 of cheese over batter.
    Pour in remaining batter and sprinkle remaining cheese on top.
    Bake in 425\u00b0 oven for 25 minutes.
    Serves 6 to 8.
