Bob'S Rum Raisin French Toast

Combine melted ice cream, eggs, rum, cinnamon and nuts in a bowl.
Beat with a wire whisk until well mixed.
Dip raisin bread into egg mixture, coating well on both sides.
Saute in butter over medium heat until toasted.
Serve with a scoop of rum raisin ice cream topped with maple syrup.
Makes 4 servings.

Caramel Bananas With Rum Raisin Ice Cream

Combine the ice cream, rum, and raisins. Spoon into a metal container and cover with plastic wrap. Freeze for 2 hours, until firm.
Melt the butter in a heavy-bottomed skillet over medium-high heat. Cook the banana for 1-2 mins on each side, until golden. Divide between serving plates.
Cook the sugar in the pan for 3-4 mins, until caramelized. Remove from the heat and stir in the cream.
Drizzle the sauce over the bananas and serve with ice cream.

Freeze pie crusts and a large metal bowl 10 minutes.
Meanwhile, soften 2 pints ice cream at room temperature.
