Rum Raisin Rice Pudding - cooking recipe

Ingredients
    1/3 cup raisins, chopped
    1/4 cup rum
    2 None eggs
    1/2 cup heavy cream
    1 cup milk
    1/4 cup granulated sugar
    2.5 oz cooked white rice
    2 tsp cinnamon sugar
    None None ice cream, to serve
Preparation
    Preheat oven to 325\u00b0F. Place a medium baking dish in a large roasting pan. Combine raisins and rum. Set aside for 10 mins to plump.
    Whisk together eggs, cream, milk and sugar. Add rice and raisin mixture. Pour into baking dish and sprinkle with cinnamon sugar. Add enough boiling water to roasting pan to come halfway up sides of baking dish. Bake for 35-40 mins, until just set. Serve warm with ice cream.
