Rum, Raisin And Chocolate Chip Rice Puddings - cooking recipe

Ingredients
    1/3 cup raisins
    2 tbsp rum
    1/2 cup milk
    3 None large eggs
    1/3 cup sugar
    1 tsp vanilla extract
    7 oz cooked rice
    2 oz dark chocolate chips
    1/4 tsp cinnamon
    None None Ice cream, to serve
Preparation
    Preheat oven to 350\u00b0F. Place four 1 cup ramekins in a large baking pan.
    In a small bowl, combine raisins and rum. Set aside 5 minutes. Drain off excess liquid and discard.
    In a medium bowl, whisk milk, eggs, sugar and vanilla together.
    Divide rice, raisins and chocolate evenly among dishes. Pour egg mixture evenly over top. Add enough boiling water to baking pan to come halfway up the sides of dishes. Bake 15 minutes.
    Sprinkle each custard with a little cinnamon. Return to oven and bake another 15-20 minutes. until custards are firm, but slightly wobbly in the center. Serve warm or cold with ice cream.
