Beat powdered sugar into the mashed potato. Keep adding powdered sugar until mixture is at a dough like consistency and is no longer sticky.
Turn the potato \"dough\" out and knead for about 5 minutes; add more powdered sugar if necessary.
Roll the potato \"dough\" out to about 1/4 inch thickness and spread with peanut butter or jelly or both.

Equipment needed: Potato Ricer, Pasta Rolling machine, Mixer,
Cut up potato. Cook until it is tender; drain. Put in bowl and let cool. Mash up potato. Add sugar until it resembles play dough. Roll out to 1/4-inch thick. Spread on peanut butter. Roll up like a jelly roll. Cut into 1/4-inch pieces. Let dry. Put in layers with foil between in closed containers. The candy will last for 2 weeks.
Work hot potato 1/4 at a time into sugar and salt until mixture is consistency of pie dough.
