Potato Candy - cooking recipe

Ingredients
    1 medium size potato
    few drops vanilla
    2 1/2 to 3 1/2 c. powdered sugar
    peanut butter
Preparation
    Boil, peel and mash potato.
    While still hot, start adding sugar and vanilla.
    Keep adding sugar until like pie dough.
    Put powdered sugar on wax paper or pie board.
    Mix candy well and roll just like pie crust.
    Spread peanut butter and roll like jelly roll (about 1/4-inch thick).
    Chill for a few hours and cut 1/4-inch thick.
