Portuguese Style Bean And Kale Soup

Chop linguica into rounds. In dutch over or large pot, heat 1 tbsp olive oil and add linguica, cook until linguica begins to golden and the oil begins to turn pink or orange. Add chopped onions, saute a few minutes. Add garlic, saute 1 minute. Add white beans, white pepper, and chicken broth/stock, bring to boil, reduce to medium low, Cover and cook 1 to 2 hours. Before serving, shred the kale and add to the pot and cook about 15 minutes (longer if you like it more wilted) Serve.

Chickpea Soup (Portuguese)

Cover meat, linguica and onion with water and bring to a boil. Add the soaked dried chickpeas if you are using them.
Cook until meat is fork-tender (2 1/2 to 3 hours over medium heat).
When meat is cooked, add the peeled and chopped vegetables (and canned chickpeas if you are not using dried kind).
Add more liquid as needed while ingredients are cooking.
I drain off most of the liquid when the soup is done and cook the rice in it.
Add the sprig of spearmint for last few minutes of cooking.

Lower heat and add beans and red pepper.

Simmer, covered, 20 minutes.
Serves 6 to 8 people.

Slice and saute linguica; add sirloin.
Pour off fat.
Saute onion, mushrooms, bell pepper and garlic.
Add to meat and let simmer.
Salt and pepper to taste.
In a large slow cooker or stew pot, add all ingredients and simmer for 2 to 3 hours.
Add 5 to 6 slices of bacon in the last hour.

Portuguese Bean Soup

Place ham hock, linguica, onion, and water into a Dutch oven over high heat. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 1 hour.
Remove meat from ham hock, chop, and return to soup. Stir in potatoes, celery, carrots, stewed tomatoes, tomato sauce, and garlic. Cover, and continue simmering for 1 1/2 hours, stirring occasionally.
Stir in cabbage and kidney beans, cook until the cabbage has softened, about 10 minutes.

Creole And Linguica Rice

Saute onion, pepper and linguica with spices in saucepan.
Put aside.
In a 2-quart saucepan combine rice, margarine and water. Bring to a boil, then lower heat and cook 20 minutes.
Stir in onion, pepper and linguica with spices.

Linguica Casserole

Cut linguica into 2-inch chunks. Cube potatoes; slice onion and peppers into thin strips. Dice tomatoes into 1-inch chunks. In a large casserole dish, layer potatoes, onions, peppers and tomatoes. Drizzle oil and sprinkle a little garlic powder, parsley, salt and pepper. Top with linguica. Cover dish and cook at 350\u00b0 for approximately 1 hour.

Saute green pepper and linguica until cooked.
Cook macaroni. Mix macaroni, green pepper and linguica together.
Cut up cheese into cubes; put on top.
Pour in milk.
Put in oven at 350\u00b0 until cheese is melted.

Linguica Hors D'Oeuvres

Grind together the linguica, onion and cheese using food grinder or food processor.
Cut crust off bread and quarter each slice.
Top each piece of bread with linguica mixture.
Bake on cookie sheet at 425\u00b0 for 10 minutes or until top browns and cheese melts.

Linguica Soup

Soak kidney beans in water overnight; drain.
Cook, brown and slice linguica.
In a large 8-quart pot, add linguica, onions, beans, cabbage, garlic, salt, pepper, vinegar and tomatoes.
Add water to cover.
Bring to boil.
Lower heat and simmer 30 minutes. Then add tomatoes and simmer an additional 2 hours.
Add the cubed potatoes the last 1/2 hour.
