Portuguese Kale Soup - cooking recipe
Ingredients

1 lb. linguica
1 Tbsp. olive oil
1/2 red bell pepper, chopped
4 garlic cloves, minced
1 large onion, chopped
1 gal. chicken broth
4 bay leaves
2 bunches kale, chopped
4 large potatoes, quartered
1/4 c. parsley, chopped
1/4 tsp. crushed red chili pepper
salt and pepper to taste
3/4 c. white beans (optional)
Preparation

Remove casing from linguica and
saute in olive oil.
Add red bell pepper, onion, garlic and potatoes.
Season with salt and pepper and saute mixture until translucent.
Add chicken broth and heat to boiling.
Add kale, bay leaves and parsley; return to boil.
Lower heat and add beans and red pepper.
Salt and pepper to taste and simmer for 2 hours.
