TO MAKE BASIC PORK SAUSAGE RECIPE: Place ground pork into a large bowl. Measure and distribute ingredient items evenly over pork. Wearing kitchen gloves, combine mixture using hands until thoroughly blended. Brown pork sausage in skillet, or cook according to recipe directions.
TO MAKE VARIATION SAUSAGE RECIPE: Add specified additional ingredients before mixing. Brown in skillet, or cook according to recipe directions.
Set oven to 350 degrees.
In a large skillet, over med-high heat, cook pork until browned; drain, set aside.
In another skillet, melt butter.
Stir in celery, onion and garlic (if using).
Cook about 10 minutes, or until veggies are tender.
In a bowl, stir together the bread, cooked sausage, celery, onion, pineapple, cranberries, pecans, parsley, oregano, sage, salt and pepper.
Pour into a lightly-greased 3-quart casserole dish; cover the casserole.
Bake for 30-35 minutes, or until heated through.
Place sausage in skillet, cover with water. Bring to a slow boil; boil for 10 minutes.
Drain and return to heat.
Add apricot jam and orange juice. Simmer for at least 1/2 hour, or until liquid has thickened. Keep a lid on skillet and turn sausage several times while cooking. Serve hot.
Garnish with orange slices.

steam sausage and remove until later. In the same liquid, steam celery, onions and bell pepper.\tNow cut up sausage in bite-size pieces.
When vegetables are done, add sausage and tomatoes.
Cook for 15 minutes.
Drain pineapple juice

Cook for 15 minutes.\tAdd cornstarch to pineapple juice to thicken gravy and cook for 15 minutes.
Saute onion for 2-3 minutes, then add peppers and garlic.
Cook, stirring frequently, another 2-3 minutes, then add sausage.
Stir fry on medium heat about 5 minutes, till sausage is browned, then add pineapple & cook another 2-3 minutes till sauce bubbles and reduces.
Stir in mango chutney and cook another minute.
Serve over rice.
Or you could put the vegetables, pineapple& sausage on skewers, brush with the chutney& broil or grill.
Note: I have also tried this with a chicken & apple sausage with good results.

Mix pineapple and pudding in bowl. Gently stir in whipped topping.

Spread 1/3 pudding mixture over bottom layer of cake. Top with second layer. Repeat layering, ending with pudding.
