Sausage Pita Melts - cooking recipe
Ingredients

4 None thick lamb sausages
4 None whole wheat pitas
1 1/4 cups tomato salsa
1/2 cup grated pizza cheese
1 None small white onion, peeled and finely chopped
1 None small cucumber, finely chopped
1 (8 oz) can pineapple pieces in natural juice, drained
None None mixed greens, to serve
Preparation

Preheat broiler. Broil sausages, turning occasionally, for 6-8 mins, or until browned and cooked through. Let cool slightly then slice.
Split open pita bread and flatten with your hands. Spread salsa over pitas then top with cheese and sausage. Broil for 2-3 mins, or until golden brown and cheese has melted.
Combine onion, cucumber and pineapple in a small bowl. Spoon over warm pita melts. Serve with mixed greens.
