Preheat oven to 350 degrees F (175 degrees C). Combine stuffing and 1 tablespoon gravy in a bowl. Press the stuffing into the bottom of a 9-inch pie pan.
Beat the cream cheese, ricotta cheese, eggs, and 3 tablespoons gravy with an electric mixer in a large bowl until smooth. Fold in the diced turkey. Spoon the filling into the pie pan. Bake in a preheated oven for 35 minutes. Remove from oven and cover the top of the cheesecake with the cranberry sauce.

Remove the meat from the bones and put through coarse blade of grinder together with onion. Season to taste with salt and pepper, some leftover gravy and stuffing. To each 2 cups of meat add 1 beaten egg. Bake in a loaf pan in a moderate oven (350*) for 1 hour. Serve with hot turkey gravy.

Creamy Turkey Soup

Bring turkey broth to a boil in a large pot.
Add potatoes, carrots and celery and cook for about 20 minutes or until potatoes are almost tender.
Add leftover turkey, green onions, salt, pepper, thyme and sage; stir well and return to a boil.
Cook over medium heat for another 5 minutes.
Meanwhile, mix evaporated milk and flour in a mixing bowl with an electric mixer.
Blend milk mixture into soup.
Cook, stirring constantly, until thickened (approximately 8 to 10 minutes).
Serve hot.

Quik Turkey Pot Pie

Mix leftover turkey, soups, onion and seasonings.
(You can also add peas and carrots.)
Heat on stove for 10 minutes, then pour in pie crust.
Mix Bisquick, eggs and milk; stir for 2 minutes.
Pour over pie for the crust on top.
Bake at 350\u00b0 for 40 minutes.
