In a small saucepan, cook pudding mix and milk according to package directions. Remove from heat, cover and chill completely.
Using an electric mixer, beat the shortening and sugar until doubled in volume, about 30 minutes. Gradually add the chilled pudding to the shortening mixture. Continue to whip until sugar is dissolved and you can not feel it with your tongue when you taste the filling.
Use a pastry bag to fill the lady locks. Freeze or serve immediately.

Whisk 6 egg yolks, powdered sugar and vanilla extract until creamy. Add mascarpone. Whip egg whites and a pinch of salt to medium-stiff peaks and fold in. Set aside.
Arrange 1/2 the cookies in the bottom of a 11x6 inch shallow dish. Combine espresso and grappa then drizzle 1/2 over cookies. Pour 1/2 the mascarpone cream over top. Repeat layers with remaining cookies, espresso mixture and mascarpone cream. Chill for 3 hours.
Serve tiramisu sprinkled with cocoa powder and strawberries on the side.

For the mascarpone cream, whisk the egg yolks and sugar until thick and creamy. Whisk in the mascarpone gradually until smooth.
Mix the espresso and liqueur in a shallow dish. Dip half the cookies into the coffee mixture and distribute them between 4 glasses. Divide half the mascarpone cream between the glasses. Repeat with the remaining cookies and mascarpone cream. Chill at least 1 hour and dust with cocoa powder to serve.
In a pan put water and coffee and boil till half in quantity.
Let this cook down.
In a bowl beat whipping creme and sugar till sugar dissolves.
Mix cheese into this and blend some more and set aside.
Dip lady fingers in cooled coffee mixture and lay them in 8x8 dish. Pour half the cheese mixture over this and spread evenly.
Dust with cocoa powder.
Lay another layer of fingers dipped in coffee mix and top with cheese mix .
Top with cocoa powder.
Chill for at least 2 hours and then serve.
Rinse a 6-cup loaf pan with cold water and line with foil. For the mascarpone cream, beat the egg yolks with the sugar. Mix the gelatin with the mascarpone and stir into the egg yolks, along with the mint and fruit segments. Beat the egg whites with the salt until stiff then fold into the mascarpone mixture.
Soak the cookies in the orange juice and lay them in the loaf pan in alternating layers with the mascarpone cream. Refrigerate for 4 hours, then turn out of the pan and remove the foil. Slice to serve.
