Chocolate And Raspberry Tiramisu - cooking recipe

Ingredients
    3 oz raspberry-flavored gelatin powder
    2 cups frozen raspberries, thawed
    1/4 cup coffee-flavored liqueur
    10 oz cream cheese, at room temperature
    2 tbsp powdered sugar
    2 tbsp cocoa powder
    1 1/2 cups heavy cream
    4 oz good-quality dark chocolate, melted, cooled
    14 None lady finger cookies
Preparation
    Grease an 8x4 inch loaf pan. Line base and sides with 2 layers of plastic wrap, extending it out a few inches at long sides. Prepare gelatin according to package directions. Pour 1 cup of gelatin into prepared pan. Sprinkle with 1/2 raspberries. Chill for 2 hours or until set. Stir liqueur into remaining gelatin, cover with plastic wrap and set aside.
    Using an electric mixer, beat cream cheese, powdered sugar and cocoa powder until just combined and smooth. Add cream and melted chocolate and beat until soft peaks form.
    To assemble, spread half the cream cheese mixture in prepared pan over set gelatin and level the top. Dip 6 of the cookies into the liqueur and gelatin mixture and arrange on cream cheese layer. Spread remaining cream cheese mixture on cookies and level the top. Dip remaining cookies into liqueur and gelatin mixture and arrange on cream cheese layer. Cover top with overhanging plastic wrap. Chill for 3 hours or until firm.
    Turn out onto serving plate. Remove plastic wrap, slice and serve with remaining raspberries.
